There are options available to adjust what columns are shown in mobile view, but these do not change the view type of a data field.
We could introduce checks for things like "screen-width" as form state conditions so that, depending on available screen size, different (e. g. more optimized) fields could be shown. This would be very flexible, as you could have multiple versions of the same data field, optimized for different sizes.
Another idea is to offer options to switch list fields to a more mobile-friendly card layout automatically (your 2nd screenshot) if a certain size-threshold has been reached. Its probably a bit of work to get it looking right in all cases, but it should be doable.

As you probably have guessed, with the next release we are focussing on UI elements, so its a good time to also think about these use-cases.
